Simple Herbed Scallops
Makes ServingsThis recipe is so incredibly easy and so delicious. These scallops can be a main dish or served as a starter for an elegant dinner.
Ingredients
24 large scallops
2 tbsp butter, melted
2 slices of brown bread
1 tbsp Parmesan cheese
1 tbsp chopped fresh parsley
1 tbsp chopped fresh chives
1 lemon, cut into 4 wedges
salt and pepper, to taste
Directions
- Preheat broiler. Rinse scallops and pat dry. Toss scallops with butter to coat well.
- In a food processor, process bread, cheese, parsley, chives, salt and pepper until very fine. Dip one flat side of each scallop in the crumb mixture and place in a lightly buttered, broiler safe, baking dish, crumb side up. Broil 5 minutes until scallops are opaque throughout. Serve with lemon wedges.
