Onion and Red Pepper Marmalade with Sage
Makes 6-10 ServingsA lovely accompaniment to roasted meats and poultry.
Ingredients
3 tbsp olive oil
3 medium onions, sliced thinly
3 garlic cloves, chopped
3 peppers (red, yellow, orange) roasted, peeled and thinly sliced
2 tbsp chopped fresh sage
1/2 tsp salt
freshly ground black pepper, to taste
Directions
- Heat oil in skillet. Add onions and garlic and cook over medium heat until soft and golden, about 15 minutes. Stir frequently and reduce heat as necessary. Spoon into a serving dish.
- Add peppers and their juices, sage and salt and pepper. Toss well. Serve warm or refrigerate for up to 5 days.
