Makes 4 ServingsIf you've ever savored those delicious soft baked potatoes in a Greek restaurant you know how good they are. Put this on your must-try list for tonight.
Ingredients
4 large potatoes, peeled and cut into cubes
2 carrots, chopped
3 ribs of celery
1 onion, chopped
2 cups chicken stock, homemade or canned
3 tbsp olive oil
Directions
- Preheat oven to 350°F.
- Put potatoes, carrots, celery and onion in casserole dish. Cover with chicken stock and olive oil and bake for about 1 hour, stirring occasionally.
- Potatoes are done when they are fork-tender and most of the liquid has evaporated.
