Curried Onions and Potatoes
Makes 5 ServingsTry this with hanburgers or fish for a change from French fries. The curry flavor is very subtle and the taste is delicious!
Ingredients
2 tbsp water
2 tbsp butter
1 tbsp curry powder
1 garlic clove, minced
2 large onions, cut into wedges
4 large potatoes, peeled and cut into chunks
1/2 cup sour cream or yogurt
salt and pepper, to taste
Directions
- Preheat oven to 350°F. Measure water, butter, curry powder, garlic and pepper into a 4-qt baking dish. Put in oven until butter melts.
- Stir vegetables into curry mixture until each piece is coated with mixture. Cover.
- Bake until potatoes are tender, about 40 minutes. Stir occasionally during cooking. Remove dish from oven, stir in sour cream and serve.
