Cornish Hens with Spiced Glaze
Makes 6-8 ServingsAll you need with this dish is some buttered baby carrots and a tossed salad and you've got an impressive dinner to serve family or friends.
Ingredients
1 Rice Stuffing recipe
4 Cornish hens
1/2 cup apple jelly
1/2 cup chicken broth
1/2 tsp allspice
1/2 ground cinnamon
Directions
- Preheat oven to 375°F. Clean hens and, using large clever, cut each hen through the breastbone to form two halves.
- In a well-greased 3-qt baking dish, spread Rice Stuffing (un-cooked) evenly across bottom of dish and position half a hen, cavity side down. Sprinkle with salt and pepper.
- In a small saucepan, heat apple jelly, 1/2 cup chicken broth, allspice and cinnamon until jelly is melted. Spread half the glaze over the hens. Put in oven to bake.
- Continue to bake until hens are thoroughly cooked. Serve with remaining glaze on the side.
