Ruby Fruit

Makes 8 Servings

With fresh fruit in season, now is the time to make this dessert and enjoy every bite!

Ingredients

1 cup blueberries
1 cup raspberries
1 cup black raspberries
1 cup black currants (if available)
2 cups strawberries, hulled and quartered
1/2 cup strawberry jam
1/4 cup black currant nectar (such as Ribena)
2 tbsp raspberry or other fruit liqueur (optional)
mint leaves, for garnish

Directions

  1. Combine fruit in a serving bowl.
  2. Combine jam, nectar and liqueur in food processor or blender. Pour over fruit and let stand 1 hour before serving. Garnish with mint leaves. Serve with angel cake, ice cream, fruit sherbet or cookies.
