Onion and Red Pepper Marmalade with Sage

Makes 6-10 Servings

A lovely accompaniment to roasted meats and poultry.

Ingredients

3 tbsp olive oil
3 medium onions, sliced thinly
3 garlic cloves, chopped
3 peppers (red, yellow, orange) roasted, peeled and thinly sliced
2 tbsp chopped fresh sage
1/2 tsp salt
freshly ground black pepper, to taste

Directions

  1. Heat oil in skillet. Add onions and garlic and cook over medium heat until soft and golden, about 15 minutes. Stir frequently and reduce heat as necessary. Spoon into a serving dish.
  2. Add peppers and their juices, sage and salt and pepper. Toss well. Serve warm or refrigerate for up to 5 days.
