This is "island" style because of its use of ginger, curry and mango chutney. What a tasty way to prepare sweet potatoes!
1 1/2 lb sweet potatoes, peeled and cut into chunks
1 1/2 lb carrots, peeled and cut into chunks
2 tbsp butter
1 small onion, diced
2 garlic cloves, minced
2 tbsp chopped fresh ginger root
1/2 tsp curry powder
1/2 cup mango chutney
salt and pepper, to taste
