Grilled Lime Shrimp

Makes 4 Servings

This is excellent on its own - with rice or pasta salad on the side - or superb on a Caesar salad.

Ingredients

4 limes
4 tbsp olive oil
4 garlic cloves, pressed or finely minced
1 lb large or jumbo shrimp, deveined and shelled

Directions

  1. Pierce limes with fork; microwave on high for 30 seconds. Squeeze juice and place in glass bowl.
  2. Add oil, garlic and shrimp. Marinate for 20 minutes; Heat grill or preheat broiler.
  3. Thread shrimp on skewers and cook for 1 minute per side. Do not overcook. Serve.
