Grilled Lemon Chicken

Makes 4 Servings

This is a perfect combination for an easy and light summer dish.

Ingredients

1 recipe Mango Salsa
1/3 cup lemon juice
1/4 cup olive oil
2 garlic cloves, minced
1/2 tsp salt
1/4 tsp pepper
1/2 tsp dried thyme
4 single, boneless, skinless chicken breasts

Directions

  1. Combine lemon juice, olive oil, garlic, salt, pepper and thyme in a small jar and shake well.
  2. Put chicken in a shallow glass dish. Add marinade and cover tightly. Refrigerate overnight.
  3. Remove chicken from marinade and grill on a preheated barbecue for 25 minutes. Serve with Mango Salsa.
