Greek Salad

Makes 4 Servings

What a riot of flavors! This dish is so tasty that all you need on the side is something fairly plain like a simple piece of grilled chicken or warm crusty bread.

Ingredients

1 small Romaine lettuce, washed and torn into small pieces
1/2 red pepper, chopped 
1/2 green pepper, chopped
1/3 English cucumber, chopped
2 tomatoes, chopped 
1/2 cup red onion, chopped 
1/2 cup feta cheese, crumbled 
1/2 cup Kalamata olives 
1/4 cup chopped flat-leaf parsley

Dressing
1/3 cup olive oil
2 tbsp lemon juice
2 tbsp red wine vinegar
1 tsp dried oregano
2 garlic cloves, minced
1/4 tsp salt
generous grinding of black pepper

Directions

  1. Wash Romaine lettuce and tear into small pieces. Drain and rinse in cold water. Refrigerate while chopping vegetables.
  2. Chop vegetables. Combine all dressing ingredients in a covered mixing bowl and shake to blend.
  3. Put lettuce, cheese, olives and vegetables into a bowl and toss with dressing.
