2 Tbsp butter or margarine
¼ chopped onion
2/3 c long grain rice (not instant)
2/3 c spaghetti
2 c chicken broth
1 c frozen vegetables (peas, carrots, or mixed)
Garnish: ¼ c sliced almonds, ¼ c parmesan cheese
Preheat oven to 425F. Melt butter in a 2 ½ qt dish for 30 seconds on high in microwave. Add onion and return to microwave for 1 minute on high. Add rice and spaghetti, cook in microwave on high for 2 minutes longer, stirring after 1 minute. Add liquid, cover, and cook on high in microwave for 5 minutes, then and additional 5 minutes more on medium. Remove cover. Top with almonds and cheese. Place in preheated oven to brown (5-10 minutes).
