Fruity Streusel Cake

Makes 6 Servings

This is a very versatile dessert. It is different - yet just as good - every time you change the fruits.

Ingredients

3/4 cup butter
3/4 cup white sugar
1 egg
2 1/2 cups flour
4 tsp baking powder
1/2 tsp cinnamon
4 cups sliced fruit (apples, plums, peaches, blueberries, etc.)

Directions

  • Preheat oven to 375°F.
  • Cream butter, sugar and egg together. Mix flour, baking powder and cinnamon together and add to butter mixture. Batter will be crumbly. Pat three-quarters of the mixture into an 8" cake dish/pan.
  • Put sliced fruit on top of mixture. Sprinkle remaining crumbs on top. Bake for 35 to 40 minutes until cake is bubbly and browned.
  • Serve hot with ice cream.
