Curried Onions and Potatoes

Makes 5 Servings

Try this with hanburgers or fish for a change from French fries. The curry flavor is very subtle and the taste is delicious!

Ingredients

2 tbsp water
2 tbsp butter
1 tbsp curry powder
1 garlic clove, minced
2 large onions, cut into wedges
4 large potatoes, peeled and cut into chunks
1/2 cup sour cream or yogurt
salt and pepper, to taste

Directions

  1. Preheat oven to 350°F. Measure water, butter, curry powder, garlic and pepper into a 4-qt baking dish. Put in oven until butter melts.
  2. Stir vegetables into curry mixture until each piece is coated with mixture. Cover.
  3. Bake until potatoes are tender, about 40 minutes. Stir occasionally during cooking. Remove dish from oven, stir in sour cream and serve.
