Buffalo Chicken Tortilla Pizza with Blue Cheese Dipping Sauce

Ingredients

Chicken
2 chicken breast halves (seasoned with salt and pepper)
2 tablespoons butter
1 cup corn, canned (drained), or frozen and thawed
1 cup black beans
3 tortillas
1 cup Buffalo wing sauce (approx)
3/4 cup Monterey Jack cheese
2 tablespoons green onion

Dipping Sauce
1/2 cup sour cream
1/4 cup blue cheese, crumbled
Mix both ingredients together well. Garnish with green onion.

Directions

  1. Preheat oven to 400 degrees.
  2. Saute seasoned chicken in the butter, about 4 minutes per side until lightly browned and cooked through – cut to test. Once done, let rest for 5 minutes. Dice chicken and coat with Buffalo wing sauce, reserving approximately 3 tablespoons of sauce.
  3. Mix corn and black bean together in a saucepan until warm.
  4. Bake tortilla in the oven on a baking sheet for 3-5 minutes until tortilla is crisp. Remove from oven. Spread 1 tablespoon of buffalo wing sauce on each tortilla. Top with chicken mixture, black bean and corn mixture and sprinkle Monterey jack cheese on top. Return to oven until cheese is melted. Garnish with green onions.
